I love eggs, for breakfast, in puddings, in desserts and even in cakes.
My mum fasts a lot and trying to make a cake so that everyone can eat all the times, becomes tricky.
I mean there are only so many cake designs one can do with chocolate and vanilla cake… so I did some research.
Apparently you can substitute an egg in a recipe… you can use vinegar, bananas and even apple sauce.
Now I know that mixing baking powder and vinegar is going to cause my cake to explode and I seriously hate cleaning a dirty oven so that option is a big no NO.
Bananas are okay, but if the recipe asks for 6 eggs, to use 6 bananas in a recipe turns the cake into a banana cake and that is not what I want.
So we are at the apple sauce option. It is actually really really simple to make.
Ingredients:
8 x granny smith apples, peeled and cut into cubes.
4 x tbsp. cold tap water.
4 x tbsp. lime juice… I used the store bought juice not fresh.
3 x tbsp. castor sugar.
Method:
Place all the ingredients in a pot, cover and allow to boil on a medium heat, till soft.
Remove from the heat and pour into a bowl.
Add the castor sugar and fold into the apple mixture.
Allow to cool and store in an airtight container in the fridge till ready to use.
