Banana and walnut cookies

These past few weeks have been draining, with prayers every other weekend. The just isn’t time to stand and bake and of course I have been 100% lazy. This also means that are no groceries in the pantry and no food in the fridge. Everything is either last minute throw together or take away.

I finally gave in today and cleaned out the fridge and went grocery shopping. The lady at the counter, kept looking behind me as if she expected this army of children to be looking back at her.

All I could say was this was my first real shopping trip since March, time to fill the freezer and pantry in case of another lock down.

I really thought I was getting fat, I mean I can see my kangaroo pouch developing, but yet at the super market some idiot still pushed his empty trolley at me, hoping that I would move out the way so it would go straight into the trolley bay. Bad luck, it hit me in the bum and of course you know me, I just forcefully shoved it back at him and pretended he was the bubblegum at the bottom of my shoe and I was the Queen.

Seriously what has happened to society? I have lost count on the number of times I have been reported to our head office because we have run out of the promotional toy cars. As if it is my fault that we don’t have stock. Or that I am hiding it, in the vein hope to give it to my cousins as Christmas presents. Most of the times I just give them the head office number, because there is just so many times in the god dam day I can give the same reply., “ WE ARE OUT OF STOCK,” or “ THE PROMO PERIOD IS OVER.”

 Who knew a plastic toy could bring out the worst in people? One customer gave me a lecture, informing me that the government had given my company millions of rands to make these plastic toy cars and the fat cats in head office had pocketed it all….Again not sure where he got this information from, seeing as I am 100% sure that the government did not waste millions of money on a single car promo when we were in a pandemic. But I mean, what do I know?.  If only I could hide that million for them… all those Le creuset pots I have been eyeing would be mine all mine…wahahahah…

I am trying to eat more fruit and loose the stomach, but customer complaints before morning coffee, means one thing and one thing alone. CHOCOALTE AND SWEETS AND FIZZY DRINKS every possible minute of the day.

While eating a fizzer, I came across this recipe and it seemed like the perfect recipe that would use those forgotten bananas I bought and it was drizzled with chocolate, which was just what my sweet tooth craved and hello bananas also equals healthy. At least I was getting in 1 of my required 5 fruits and vegetables. Right???

I was really looking forward to these cookies, I thought that they would be crunchie and hard and give my gums a good work out, work out all that talking bullshit tension in my jaw line. But alas, they were soft and chewy and more cake like.

But there were delicious. My dad loved these, said finally something that wouldn’t break his teeth. My mother wasn’t that impressed she kept telling me they were stale, she wanted hard crunchie cookies that she could eat in the middle of the night and wake up the entire street with her crunch crunch all night long.

The original recipe asked for a medium egg, but I substituted it with a vegan egg.

Ingredients:

  • 1 ½ x cups cake flour, sifted.
  • 1 x tsp baking powder.
  • 1 x stick butter (100g), room temperature.
  • 1 x cup light brown sugar, sifted.
  • 1 x cup walnuts, roughly chopped.
  • 1 x large banana, peeled and mashed
  • 1 x vegan egg.
  • ¼ x cup milk.

Method:

  • In a mixer, cream together the butter and sugar till light and fluffy.
  • Mix in the egg and banana.
  • Add in the cake flour and baking powder and beat till well combined.
  • Mix in the milk.
  • Fold in the chopped walnuts.
  • Drop spoonfuls of the mixture onto a greased baking tray and pop into a preheated oven.
  • Bake at 180 degrees for 10 – 15 minutes or until lightly golden brown.
  • Remove from the oven and allow to cool for a few minutes on the baking before placing on a cooling rack and allowing to cool completely.
  • Once cool, drizzle some melted chocolate over the top….this is not a required step, but it does make these cookies even more delicious.
