Who doesn’t love onions rings with their burgers????

I LOVE LOVE LOVVVEEE Spur’s onion rings that are served with their meals. Especially when I drown the onion rings in their secret chip sauce…. HEAVEN.
Of course, I am not going to ride all the way to the nearest Spur just to order a plate of their onion rings… with their prices I could buy an onion farm….just kidding.
I came across a recipe for battered onions in a magazine and well when I first saw the recipe, I flipped the page.
I have tried making battered rings before and they have been far from perfect. The batter always falls off and has a mind of its own or the batter doesn’t brown but the onion somehow burns to a crisp.
The first lazy Saturday in the new year, I was already out of ideas on what to make for lunch when I thought, why not make burgers and serve some rings on the side.
Let me just tell you one thing. Spur has nothing on my onion rings… sooo delicious and and tasty and so crisp yet sooo soft. I think if there was a handful of rings left over to go with the burgers well then my parents were lucky.
I was eating them straight out of the frying pan. I burnt a couple of taste buds in the process, but it was all worth it in the end.
Ingredients:
- Oil for deep frying.
- 130g x cake flour.
- 1 x cup buttermilk.
- 1 x egg, whisked.
- ½ x tsp bicarbonate of soda.
- ½ x tsp salt.
- 1 x onion, cut into thick rings.
Method:
- Mix the flour, buttermilk, egg, bicarbonate of soda and salt together.
- Dip each ring into the batter and shake off any excess.
- Deep fry till golden brown.
- Drain on a paper towel and season with some salt.
