Chargrilled pineapple

My first weekend out and about in town. I got to the post office 2 hours before it opened, to get my car license renewed. 2 hours before the time and I was still number 4 in the line.

I spent roughly an hour, getting everything sorted in the post office and after that the weekend was mine. I lie, the weekend was somehow filled with chores, grocery shopping, flower shopping, dropping off extra beds at the vet’s and then rush home to pray and watch our Temple service via live stream.

And here I thought weekends are meant for sleeping in and lazing around in pj’s all day. I was so wrong.

This was the first time since lockdown that I went in-store grocery shopping. What an experience it was. I think by the end, I smelt like a perfume ad, I had been sprayed with a few hand sanitizers that I didn’t need to wash my hands for a few months… just kidding. I could not wait to rush home and wash with soap and water.

I felt like a kid in a candy store, when I walked into the supermarket. So empty and the shelves were nice and full and gleaming with products that screamed at me to buy them and boy did I have to show some restraint. I did go overboard at the fruit section.

Again, I am not sure why, seeing as the only fruit group I eat of late are chocolate covered raisons, so one would think I would have gone bananas in the chocolate isle, nope I went bananas in the healthy fruit isle. Maybe I sniffed too many sanitizers.

Anyway, when I got home and started unpacking everything, then and only then did I have buyer’s remorse. I bought fruit that we don’t really eat. Papaya for example, my mother can’t stand to look at the black little seeds on the inside, I bought guavas. I hate guavas and then I bought the all time hated fruit in our house. The dreaded pineapple. Every time anyone of us eats a pineapple, the corners of our mouths gets cuts, so we tend to stay away from it. But here I was buying 6 pineapples for no apparent reason.

My mother threated to cut up my bank card if she saw those pineapples in the bin at the end of the week. As If I am scared. I have Mr D online, she and my dad are going to starve. But because I am a good daughter and I respect my elders. I did some research for recipes that used pineapples.

I made pineapple cheesecake, pineapple chicken and I saved the best for last. The last of the pineapples, I use to make this recipe.

I came across this recipe in Sabrina Ghayour’s recipe book and at first it seemed a bit daunting. I haven’t grilled sugared fruit before and I was already predicting the disaster I would create in the grill pan.

Alas, I was saved from the nightmare. Everything turned out the way it should have. The only difficulty we encountered was how to eat it, with a fork or with your hands. We just dove straight in.

The verdict it was delicious, even my mother loved this dish, wish is surprising as she loathes pineapples.

The only criticism the old timers had was that when I make this dish again, I should rather remove the outer skin, it would be so much easier to eat and enjoy and I couldn’t agree more.

The world must be ending that everyone under the same roof, is agreeing about the same dish. I need to see which side the sun rises tomorrow.

Ingredients:

  • 1 x large pineapple.
  • Olive oil.
  • Brown sugar.

Ingredients for the yoghurt sauce:

  • 150g x plain yoghurt.
  • 20g x mint leaves, roughly chopped.
  • Zest and juice of 1 lime.
  • 1 x tsp icing sgar.
  • 1 x tbsp. cold water
  • 1 x red chilli, finely chopped to garnish

Method:

  • Cut the pineapple into quarters.
  • Brush each wedge with a little olive oil.
  • Sprinkle the oiled covered flesh with brown sugar.
  • Place sugar side down on a hot griddle pan.
  • Grill till the flesh is evenly grilled.
  • Place on a serving tray and drizzle over with the yoghurt sauce and garnish with the chilli
  • To make the sauce, whisk together all the ingredients until well combined.
