Cheese sandwich loaf

I have an old Betty Crocker recipe book. This was the first thing I bought when I discovered Amazon online and this was also the book that started my obsession with collecting cookbooks.

I have never tried a recipe from this book, not because I am not a huge fan but because being the first book it happens to be right at the very back of the book shelve. While springing cleaning and deciding what books to give away to Hospice, I came across this book once again and well no time like the present to try my hands at a new recipe… don’t you think.

I really wanted to make this recipe as soon as I came across it in the book. Of course it was a bit daunting as it required an entire loaf of uncut bread. Seeing as my father does work for a bread company, one would think he would remember to bring me a single loaf uncut bread….wishful thinking, I have been reminding him since Monday and guess what this morning when I told him, not to forget, he asked me forget what and then when he came home lunch time, he forgot the bread. Seriously after telling him so many times and he still forgot. All those words I spoke, are now just lost, they all fell onto deaf ears.

Anyway, seeing as I had already made all 4 of the filling, I had to opt for sliced bread and the recipe still wanted the crusts to be cut off… that is a lot of bread to waste in my opinion, so I just left the crusts on. Maybe if I had used the proper bread the removal of the crusts would not have been so wasteful?

The recipe also started that the entire load had to be covered in cream cheese, I started covering it, when my father walked in and saw what I planned to do and he was moaning and groaning, so I opted to cover parts of the loaf and make it like a naked loaf to please his needs. This man can complain, he assumed because it was cream cheese it would be sweet. No sugar in this cream cheese topping.

All in all it was a very delicious savoury loaf cake and the fillings were to die for. Hopefully next time when I make this cake I will use the proper bread and maybe it will come out even better.

Ingredients for the red filling:

  • ¼ x cup cooked ham, finely chopped.
  • 3 x slices bacon, finely chopped.
  • ¼ x cup peppadews, finely chopped.
  • 2 x tbsp. mayo.

Method:

  • Mix everything together in a bowl.

Ingredients for yellow filling:

  • 4 x hard boiled egg yolks, mashed,
  • 2 x tbsp. mayo

Method:

  • Mix everything together in a bowl.

Ingredients for the white filling:

  • 2 x ounces cream cheese.
  • ½ x cucumber, finely chopped.
  • 1 x tbsp. mayo

Method:

  • Mix everything together in a bowl.

Ingredients for the green filling:

  • 1/3 x cup sweet dills, finely chopped.
  • ¼ x cup watercress, finely chopped.
  • 3 x tbsp. mayo

Method:

  • Mix everything together in a bowl.

Ingredients for the rest of the loaf:

  • 1 x loaf unsliced bread.
  • 2 x tbsp. butter.
  • 16 x ounces cream cheese.
  • ¼ x cup milk.

How to assemble this loaf.

  • Cut the bread into 5 slices.
  • Butter each slice of bread with some butter.
  • Evenly spread each filling between different slices of bread.
  • Place the slices ontop of each other.
  • Whisk together the cream cheese and milk.
  • Evenly spread this mixture over the entire cake and pop into the fridge to set for 3 hours before serving.
