
SOO apparently yesterday was World Chocolate day??? I forgot that and I really wanted to jump on the bandwagon for something.
Oh well I am Indian, which means I do things on Indian time, so I am doing World Chocolate day on Indian time.
Growing up there was always a consistent supply of chocolate crunchies in our house. My mum had a bear cookie tin that was always filled to the brim with these sweet addictive crunchies.
My mum had a friend at her work whose sister made them and they were just finger licking good. I used to take a spoon with and as soon as my mother got into the car, I would unwrap them and stuff my face all the way home.
Fast forward 15 years and I have not had a crunchie since my mother left that company. I just haven’t had a craving and then out of the blue of all a sudden, I got this mouth watering craving for those crunchies.
I lay awake in bed all night last night, holding my stomach because it was cramping and grumbling demanding that I feed it crunchies.
I tried feeding it Woolies crunchies, but it didn’t even hit the spot, in fact it didn’t actually hit any spot at all, all it did was make me thirsty.
I finally gave in around lunch time and had to dig really really deep in the pantry for the ingredients to make these crunchies.
I had to make these crunchies twice. The first batch I attempted to make, I forgot the flour and as the crunchies baked, all I saw was butter bubbling all over the place and then when I removed it from the oven, I still poured over the chocolate mixture thinking that I could just cover up all the butter, but all I managed to do was mix butter and chocolate together and create an even more liquefied crunchie.
When I sat back and reread the recipe I saw that I had completely forgotten to add the flour, not sure where my mind was when I first read the recipe, but luckily enough I had just enough ingredients and just enough cocoa powder to make more chocolate.
The second attempt was much much better a million times better, even my parents weren’t giving each other worried looks.
The verdict, they both loved it, my mother couldn’t stop eating them and my dad as usual he ate the crunchie part and left the chocolate part because he doesn’t like chocolate, ag man his acting boring. It’s a crunchie not a chocolate cake.
While the crunchies were cooling, I asked my mum to keep an eye on them as I had to pop out for something quick. As soon as Ieft the driveway she phoned to ask me must she take the baking paper off the top of the chocolate, and I kept telling her there was no baking paper, she made me doubt myself that I made a u-turn and went back home, in the meantime, the chocolate icing was busy setting and it looked like wax paper. No words were exchanged just a lot of laughter and I didn’t let her forget it for the rest of the day.
My verdict, it wasn’t bad, but it didn’t taste like it tasted in my memories.
Let the crunchie journey continue, I will not rest till I get my hands on that original recipe from my past.
Ingredients for the filling:
- 2 x cups cake flour.
- 2 x cups desiccated coconut.
- 2 x cups oats.
- 1 x cup castor sugar.
- 2 x tbsp. cocoa powder.
- 2 x tsp baking powder.
- 375g x butter, room temperature.
Ingredients for the topping:
- 2 x cups icing sugar, sifted.
- 3 x tsp cocoa powder.
- ¼ x cup butter, room temperature.
- Just enough hot water to create a nice smooth paste.
Method:
- Place all the filling ingredients into the bowl of a stand mixer that it fitted with a paddle attachment.
- On low speed, beat all the ingredients together, till well combined.
- Pour the mixture into a greased baking tin.
- Using your hands or an off set spatula, press the mixture into the tin to create an even layer.
- Pop into a preheated oven and bake at 180 degrees for 20 – 25 minutes,
- As soon as your remove the crunchie mixture from the oven, pour over the icing.
- Ensure the icing reaches all the sides of the tin and that there is no exposed crunchie mixture.
- Allow the chocolate to set with should take around about 30 – 45 minutes.
- Using a sharp knife cut the crunchies into squares.
Method for the icing:
Whisk together all the ingredients till well combined and a nice smooth pourable mixture.
