Happy new year to everyone.
Yes I have been extremely quiet throughout the whole of December. I took the month off from cooking fancy new recipes; I ate more take out this month than I have the entire year. I blame Mr D’s app, food delivered right to my door step.
Well the junk phase of my life is now over till December again or until I fall off the healthy eating homemade stay away from junk food band wagon.
Today with the left overs from last year’s meal… lol… seems a long time ago. I made a kale raita… super healthy and well it was 30 degrees outside no way I was standing in front of the stove.
To make matters worse, a family tradition that has been around since I was born and most likely longer. We stay awake till midnight and then have something sweet to ring in the New Year. Of course I suffer from insomnia but come every 31st December I am the one to fall asleep before midnight, same this year. Of course my mother came screaming into my room to wake me and then I was the life of the party in my PJ’s of course. Being an adult now, I swopped out the coffee for some bubbles and boy oh boy did I pay the price when I was woken up this morning asking what I was making for breakfast.
To ease myself bake into cooking and something to make the tiny bubbles in me go away I opted for healthy. Sometimes I surprise myself by eating a salad and come snack time and I make up for the meal that I missed.
Oh well… There is still 364 days left of cooking and baking up a storm and as my dad and mother kept reminding me over lunch that doesn’t mean 364 days of salad. Otherwise I am being banished from the kitchen till further notice. Parents I tell you.
- 4 x stems kale, roughly chopped.
- 3 x cups plain yoghurt.
- 2 x tsp oil.
- 1 x clove garlic, minced.
- ¾ x tsp jeera powder.
- ¼ x tsp masala.
- Salt and pepper to season.
- A dash of lemon juice.
- A handful coriander, chopped.
- Place everything in a bowl and mix to combine.
- Pop into the fridge for 20 minutes to chill and enjoy.
