Lemon cream ice box cake

So it would seem that I just happen to be a year older all of a sudden. Out of the blue, I am now moving further away from 30 and moving ever that much closer to 40.

The past 2 birthdays I didn’t celebrate, the first one, being that My Uncle and I were two days apart and I was still not ready to accept that there wasn’t going to be a double celebration at the end of June anymore and then last year, my body was at war with itself and I slept the entire.

So this year, seeing as life is so short and everyone seems to focusing on the doom and gloom of the pandemic that is currently ripping through the planet, I decided to just dress up and smile, laugh and find some silver lining in the day.

I wore jeans for the first time in 10 years. I am more of a tracksuit pants wearing person, so the jeans was something different and boy did I suffer. It kept sliding down. I might be thinner than I was last time I wore jeans or maybe the elastic got stretched in the washing machine, whatever the reason was. I had to keep pulling it up that by the end of the day, my pants was hiked to my chin, to prevent my undies from being exposed. Don’t worry tomorrow, it will be back to my old faithful black trousers.

It is tradition that I make a cake for the households birthday parties. I tried begging my mother to make me a cake, seeing as why do I have to bake my other birthday cake. It fell on deaf ears, my mother kept telling me to stop looking at her, because she was not going to bake me a cake and my father was like sure, he would me make a puli curry cake. How exciting, I mean it is not every day I turn xx.

I had my whole day planned out, wake up late, so that if my parents were hiding my dream car they would have a chance to pull it up on the driveway and surprise me. Short lived. I was abruptly woken up at the crack of dawn, 5am to be exact and before everyone in the house to get my lazy ass to work as a BVO was there and my access codes were needed. Hmm, what a party popper, no cake to work for getting me up before the sun, or maybe it was a deco for my parents. Unfortunately it was not, it was really really work related, and there wasn’t even a jump out of your surprise breakfast party waiting for me at work. No there was just some sleepy old BVO looking at me pissed off for keeping him waiting.

Of course I expected the car when I got home, nothing, I mean seriously nothing, not even a hint, it was like the past month of hinting at the car every time I saw it, wasn’t enough. I event went as far as taking a tape measure and measuring the garage against the dimensions of the car so that I could ensure that it would fit and my parents were blind to all these hints. I do not work hard for no reward. I will be expecting a reward. I mean the least that they could do for me was stand at the post office and get my car license renewed. It expired in Feb and I am extremely lazy to go stand from 6am at the post office so I can be first.  Oh well, there is always Diwali and Christmas, ample time to hint for something. Hope it won’t go unnoticed.

Okay, I am going off track here. Back to the birthday celebrations.

I came across a recipe in Katelyn Williams cookbook “Chocolate” and I really really really wanted to try it out. It seemed like it would be this very complicated treat to assemble and I really could picture everything coming tumbling down, but it was actually easy.

I loved the dessert, my dad loved it, and my mother, she had one tiny bite and then told me she is disappointed that the butter cream takes funny. Um, when I informed her that it was in fact cream cheese, whipped so lightly and fluffy that it was like eating marshmallow fluff, she still didn’t want to try it, because it tasted like butter on her tongue and even felt like butter on her tongue. Not sure where her mind was, but everyone else didn’t seem to have found the mysterious “butter” in the dessert. Maybe I hadn’t washed her bowl properly the other day? You never know with these water shedding days, I was quick quick.

I really had high hopes that my mother would love this dessert as it is made with lemon cream biscuits and she loves just loves lemon creams. Alas, she could have faked it, just for my birthday and then let me have it tomorrow, when I force fed her the left overs. But no, she had to spoil the birthday celebrations, especially after whipping 2 blocks of cream cheese, 1.5L of cream and 3 packets of tennis biscuits. I was not impressed with her. I should send her to bed without supper, teach her a lesson, better not as tomorrow, everything will be back to normally and she will punch me right into my next birthday.

I have packed the rest in a Tupperware for my dad to take to work tomorrow, hopefully they will love it. Fingers crossed.

Ingredients:

  • 580g x cream cheese.
  • 125ml x icing sugar, sifted.
  • Zest and juice of 2 lemons.
  • 5 x cups whipping cream.
  • 3 x 200g x Bakers lemon creams.

Method:

  • In a bowl, beat the cream cheese and icing sugar together, till light and fluffy.
  • Add in the lemon zest, lemon juice and cream.
  • Whip till soft peaks are achieved.

To assemble:

  • Spread some of the cream cheese mixture onto a serving platter.
  • Arrange a layer of biscuits onto of this cream cheese layer.
  • Spread another layer of cream cheese mixture ontop of the lemon creams layer.
  • Add another layer of lemon creams.
  • Repeat the layers, cream cheese mixture, lemon creams, until you end with a cream cheese layer.
  • Garnish with grated white chocolate and a dusting of icing sugar.
  • Pop into the fridge to chill for 60 minutes before serving.
