Lemony greenbeans

Growing up we only had green beans one way, in a curry.

Never have I ever had greenbeans any other way, like grilled or sauted or steamed and not even raw.

I tired eating raw once, after seeing my swimming coach’s wife munching down on them during a training session. I mean if she was eating them, how nasty tasting can they be?

I was so wrong, not a fan, or maybe it is just a required taste??? I will never know. I never really tried the raw version again.

I came across this recipe in Ree Drummonds cook book and seeing as I did have a packet in the fridge that was slowly edging its way closer to the element in the fridge which would just cause it to get frost bite and eventually get thrown up. I decided to make something with it and this recipe just screamed at me.

I loved them, the bursts of lemon flavour soo up my alley. My parents my mother said they still tasted raw and were just too crunchy and my father, he took one look and pushed them quietly to the side of the plate never to be touched.

Parents taste buds only know one thing CURRY CURRY and more CURRY.

Ingredients:

  • 3 x tbsp. butter.
  • 500g x greenbeans, ends cut off.
  • 2 x lemons.
  • ¼ x tsp salt.
  • ¼ x tsp black pepper.

Method:

  • Melt butter in a pan.
  • Add in the greenbeans and saute till tender.
  • Add in the lemon juice.
  • Season with salt and pepper and toss to mix everything together.
