No bake Kiri cheesecake

What a long week this has been, and boy am I glad that it is finally over.

It started off with x-links crashing globally and well, when you work in retail customers tend to scream at you for the world crashing. I have been screamed at, spit at and had my fortune told to me for 12 hours straight, thank you x-link, thank you so much, I really should send you a thank you card.

Then when I got home, I found out that there was no water, no real truthful reason given for the situation, all I knew was that it was going to be off for a few days. What a way to end a really shitty day.

Anyway, I have know crowned myself the bucket queen. I have bucket bathed, washed dishes in the bucket, dragged a bucket with me every time I go to the loo and because we have a JoJo tank, I cart the bucket up and down to the tank to refill and yes before anyone asks, it would be easier to just have the JoJo tank connected to the house, but I got a quote for that and well at this point in my life I am not going to waste thousands of rands to be able to have running water during waterless days, when I could walk for free to and from the tank.

Then there was an electrical storm for 30 minutes and well that freaked me out and because the week wasn’t even half way over yet, I asked my father for help and what do you think happens, his leg acts up, so by now I was ready to sit on the floor and cry like a baby, because I mean who carries a jug of water from the fridge to the sink and gets a leg cramp!!! Who???

Come Friday, water was on, life seemed to be smooth sailing and then we had a vet visit. The baby of the family developed an ear infection and well the ride there was perfect. The ride back was a new nightmare altogether.

That single ride home, has put me off having children EVER in this lifetime. From the moment those paws hit the back seat he was screaming and whining and shaking himself and did I mention screaming. I eventually had to pull over and make my mother sit in the back seat to keep him calm. In that moment of pulling over, all I really wanted to do was turn around in the seat and shout at the back seat and ask what the screaming was for, because if he wanted something to scream over, I would give him something to scream about and if he didn’t stop screaming this instant, I would make him walk home. I really shocked myself and for the safety of my future children, I just won’t have any. As soon as we got back home and pulled into the garage, he was this saint, who wasn’t screaming like he was being murdered in the backseat a few seconds ago.

After all this activity my nerves were shot and fried and then my dad came home and asked what was there to eat, all I could was laugh and tell him toasted cheese. Seriously, who could even contemplate cooking after that back seat tantrum throwing???

Because my dad hates toasted cheese with a passion, I decided to make something he would like for dessert.

My mother had found this recipe somewhere and she had kept it for me. We don’t really keep Kiri cheese in the fridge, but somehow it had landed up on this week’s shopping list and had been sitting in the fridge waiting to be used.

A sign from the invisible forces that a no-bake cheese needs to be made ASAP, before the water gets cut off again.

The recipe is super easy, I tweaked it to fit to what I had in the pantry and to our eggless household.

So instead of using coconut biscuits, I used eggless tennis biscuits and seeing as I didn’t have granadilla pulp, I opted for lime zest. I just love that tartness in a cheesecake.

Verdicts, my mother loved it, it wasn’t too sweet for her liking, I of course loved it and my father’s opinion on the matter, he as usual had to be different, he just had to be the party pooper, he found the cheesecake to be too sour. There is just no pleasing those old stubborn tastebuds.


  • 1 x 200g packet tennis biscuits.
  • 1/3 x cup castor sugar.
  • ½ x cup melted butter.
  • ¼ x tsp salt.


  • Place the biscuits, salt and castor sugar in a food processor and blitz till the biscuits are fine crumbs.
  • While the processor still running, pour in the melted butter and allow the biscuit mixture to come together and start coming away from the sides of the processor.
  • Pour the mixture into a creased pie dish.
  • Using the back of a measuring cup, press down lightly on the mixture.
  • Set aside while you make the filling.


  • 2 x 400g tubs Kiri cream cheese.
  • 1 x can sweetened condense milk.
  • 1 x tsp vanilla essence.
  • ¼ x cup fresh lemon juice.
  • Lemon zest to garnish.


  • Using a stand mixer, beat the cream cheese till smooth.
  • Add in the remaining ingredients and beat till well combined.
  • Pour the cream cheese filling over the base.
  • Garnish with lemon zest.
  • Pop into the fridge to chill overnight before enjoying.
