Puri and patha

imageI like puri and patha, like every other Indian.

Unfortunately I live in a town, where trying to get your hands on Indian veg and Indian goodies is like trying to find a four leave clover.

I have been trying to get my hands on yams/madumbi leaves for almost 2 years now and I have had no NOOOOO such luck.

Our local spice shop, sells the ready made patha every once in a while. The other day while I was stocking up on pur I came across a couple of packets of patha and you know what I did, I bought it all and stocked my freezer with them… I mean, one can never ever be friendly and leave patha for the next shopper… I might not get any more till patha till next year!!!

I make my own puri and of course I squeeze fresh lemon juice over each patha.

Ingredients for puri

1 ¼ x cup cake flour

½ x cup tap water.

Pinch of salt.

Method:

Mix all the ingredients together in a bowl.

Turn out onto a floured surface and knead till nice and smooth.

Break off small pieces and roll into a thin flat circle.

Fry in hot oil till nicely puffed up.

Remove from oil and drain on paper towls.

To assembly a puri and patha.

Fry your patha and allow to drain on paper towels

Place on puri down, place the patha ontop of the puri.

Squeeze some fresh lemon juice over the top.

Place another puri ontop of the patha.

Sit back and enjoy
