Simple cucumber and tomatoe salad

My father has been crying since the dawn of time for a lekker strong curry. He is tired of eating recipe book cooked food. As if it is soo bad.

Seeing as he has to fast two straight days in a row, I decided to make his dreams come true and make the pot of curry.

But he always likes a salad on the side with his curry and rice. Normally I would match a simple patcha chutney to go with it, or if I was really lazy, then I would just place a bottle of store bought beetroot salad on the table lunch time.

While paging through a vegan cookbook and trying to decide what to make for my mother for lunch, I quickly looked through the salad section and came across this recipe. My father would love this recipe, my mother on the other hand, outright refused to have it anywhere near her plate seeing as there was large visible cherry tomatoes in there and she was not having any of it.

It is very similar to that of a patcha chutney expect instead of chillies there is cucumber and pine nuts and boy oh boy do I love pine nuts. I can eat them straight out of the packet as a snack.

My dad was zero help in the critique department here all he kept saying was where did I get the big red chillies in the curry because he was growing extra chest hair that’s apparently how strong it was. MEN I tell you.

Ingredients:

  • 150g x cherry tomatoes, quartered.
  • 1 x cucumber, chopped.
  • 50g x pine nuts.
  • Juice of 1 lime.
  • 1 x tbsp. olive oil.
  • Salt and pepper to season.

Method:

  • Toss everything together in a bowl and mix well.
