Soya mince and pea curry

Now for those of you that know me well and by well I mean really well, not like wave to me in temple and ask if I am married yet but well as in you know my phone number that kind of well.

Then you will know I get sick just thinking about fasting and not being able to eat meat. I eat veggies if I have to, but normally if my parents fast I complain till I get a burger lol.

The best veggie eater I know is my mother…. Wow can she eat veggies and soya products till it comes out of her ears… my dad will rather eat potatoes every day of the fast, but my mother she loves cabbage, pumpkin, greenbeans, beans actually any veggie with roti is the way to her heart.

I am not a huge fan of soya mince, but because I try and cater for everyones likes I decided to learn to make it.

The first couple of attempts were disastrous, from still rock hard mince, to bland mince to super strong until I finally got the combination correct.

Ingredients:

1 x cup soya mince, soaked in boiling water for 30 minutes, then drained and set aside.

1 x onion, finely chopped.

2 x tsp ginger and garlic paste.

1 x tomatoe, grated.

1 x tsp masala.

½ x tsp turmeric power.

Salt to taste.

¼ x cup of peas.

½ x tsp tomatoe paste.

2 x cinnamon sticks.

Method:

Heat some oil in pot.

Add the onion and cinnamon sticks, sauté till the onions are transparent.

Add the ginger and garlic and allow to fry for a couple of seconds.

Add the spices, grated tomato and stir so that the spices coat the onions nicely.

Add a cup of water and the tomatoe paste, stir so the spices dissolve in the water.

Allow the water to come to the boil.

Add the mince and allow to cook for about 30 minutes, until the mince is almost soft. If need be, you can add a little more water so that the mince does not stick.

Add the peas and cook, till the peas are soft and all the water has been cooked away.
