Stewed sweet potatoes

I came across this recipe in a Cape Malay cook book, that I have over looked soo many times.

I am not a huge sweet potatoe fan but every time I kept opening the book to this recipe, and I was curious as to how a sweet potatoe could became a sweet afternoon treat.

When my parents asked what I was making for Sunday dessert, and I explained it to them. My mother mentioned that it was strange I was making this, because when my grandparents went to the priest’s house way back in the day to inform them that my dad had proposed and that they had to plan and get the weeding arrangements started the late priest’s wife served my grand parents this exact same dish.

Too bad the late priest’s wife never created a cookbook, I would love to have had a copy of her recipes, she always made the best food.

Our current priest’s wife says she has a book that is ready to be published, she uses  that book to cook all our temple food from, but she has been saying the same story for the past 5 years so I am not really 100% convinced that there is actually a cookbook. I did ask her for a recipe once and when I showed it to my dad he told me to throw it away, there is no way that you put tamarin pulp in apple curry, it’s a sweet curry not a sour one… I never asked for a recipe again.

All in all , everyone seemed to love this recipe, I on the other had kept making weird noses as I felt the texture on my tongue and just the smell of the sweet potatoe under my nose made my stomach upset. I think and I stand under correction here, but when I served up my dish, I literally poured the entire custard bottle over it so that I could disguise it.

Ingredients:

  • 500g x sweet potatoes, peeled and sliced.
  • ½ x cup water.
  • ½ x cup white sugar.
  • 1 x tbsp. butter.
  • 2 x cinnamon sticks.
  • 2 x all spice berries.
  • 1 x clove.
  • 2 x tbsp. desiccated coconut.

Method:

  • Place the water, sugar, butter, cinnamon sticks, all spice berries and clove in a saucepan.
  • Allow the contents to come to the boil.
  • Boil till all the sugar has dissolved.
  • Add the cubed sweet potatoes and cook till soft.
  • Remove from the heat and stir in the desiccated coconut.
