Strawberry crisp fridge tart

For those of you who were wondering, if in fact I did get a car. Nope sorry to disappoint you, but my parents did get me something new.

They got me a new toilet seat and flush handle. I accidently broke it last night, in a minor accident. I accidently pulled down on the handle to hard and it snapped and I had my free hand on the closed toilet seat and when the handle broke, my free hand went in the other direction and broke the clips that keep the toilet seat to the toilet. It was an accident; really it was I was just frustrated that the ball in the toilet system didn’t want to float, it kept falling in the water, making the toilet run, so I thought flushing it again would fix the problem. Was I so wrong, I landed up not only breaking the ball, but the handle and the seat. I am never going to live this down.

My parents have decided that seeing as how badly I wanted a present for my birthday they were getting me a new seat. Which I think is perfect; because I had to use their bathroom this morning and Lord help me. There was zero peace for me. First I was taking too long, then I was making the paint peel, then I wet the bathroom mat with the water from brushing my teeth, then I got toothpaste on the mirror and then when the toilet paper holder went missing I was to be blamed. Why is it always me? Just watch when they want to use my bathroom, I am going to put a coin lock on, so that will have to pay. No more Mr nice guy.

But to thank them for the throne seat I was going to be getting, I thought why not spoil them with something sweet, seeing as yesterday’s treat was a buttery disaster. I came across a recipe for Strawberry crisp fridge tart in Fatima Sydom’s new cook book and this was also an excuse to try out the new Checkers 60 minute app.

I placed the order at 1pm, I received the order at 4:30pm. I wasn’t that stressed what with all the new lockdown restrictions and short staffed and everyone panic buying, my parents on the other hand were stressed. My mother kept crying she was hungry as she didn’t want to eat supper and spoil the dessert, my father wanted to know if he would be getting the dessert this year and unlike my mother, he didn’t have the will power to wait for the shopping to arrive, he had to eat supper, but he did manage to find place to eat the entire dessert that I dished up for him and for once, he did not complain that it was a lot.

The original recipe asked for tennis biscuits, but because one night, when I should have been sleeping, I was busy scrolling on take a lot and I came across a box of Lotus Biscoff and I bought an entire box because it seemed like every Indian Aunty on Instagram was using this biscuit. So being Indian, I thought why not and shipped myself a box. I must say these Lotus cookies are very delicious, they sort of taste like a gingersnap.

Anyway, I opted to use these biscuits instead of a tennis biscuit. The original recipe, also stated to dip the biscuit in water. I just blitzed the entire packet into coarse crumbs. I don’t think I would be able to stand to see a biscuit break and float in the water, it would just remind me too much of the water that is currently coming out of our taps. Frightening!  This would be the first time in over 33 years I have seen brown muddy water come out of the taps. Never ever in my life have I seen this before.

I was a bit worried that this dessert would be a tad on the sweet side as it did in fact have an entire tin of caramel, but the bitter chocolate off set the sweetness so there was uncomfortable sweetie feeling when the last remnants of the dessert was finished. My parents loved it, my mother enjoyed it, she said it was well worth the wait and the dessert was really really filling.

Ingredients:

  • 2 x 200g packets of Lotus or tennis biscuits.
  • 2 x tubs of whipping cream.
  • 1 x can Nestle caramel treat.
  • 1 x slab Lindt excellence strawberry intense dark chocolate, roughly chopped.
  • 1 x cup fresh strawberries, cleaned and chopped into small pieces.
  • ½ x tsp strawberry essence.

Method:

  • In a food processor, blitz the biscuits till a coarse texture.
  • In a mixer, beat the cream and strawberry essence till soft peaks are formed.
  • Add in the chocolate pieces, strawberry pieces and tin of caramel.
  • Mix till well combined, but do not over mix as the cream will split.

To assembly:

  • In a tall glass, place a layer of the crushed biscuits.
  • Add a generous layer of the cream mixture on top of the biscuit layer.
  • Add another layer of biscuits, then another layer of cream and repeat, ensuring that you end with a cream layer.
  • Garnish with fresh strawberries, grated chocolate and a scattering of crushed biscuits.
