The big veggie one

Sometimes when I am super lazy or when I forget to take something out to defrost on a fasting day to eat or when my dad says, is there anything else other than toasted cheese sandwiches.

I quickly defrost a packet of soya burger and fry them. What a super quick and easy meal to make most of the time.

The other times I tend to make these burgers we land up in the emergency room with my mother having an allergic reaction to them. Out of all the soya products I use and soya things I make, the burgers are the things that sent her over the edge.

SOOO I tend to stay away from soya burgers which means whenever us meat eaters eat burgers she has to suffer in silence and eat her toasted cheese sandwich.

Then I was reading the WW taste magazine and looking through all the delicious meat burgers deciding which should be the next burger I should make when I just happened to turn the page and see a vegetable friendly homemade patty and guess what.

I could not wait till Friday to try it out.

The burger was a bit of a nightmare to make, I put all the ingredients into the blender and then started blitzing and nothing and I mean nothing could get those stubborn beans to become mush. I even injured a spatula in the process.

All I all I loved this burger, my father well he thought the burgers had avocado in them but he did mention to me in passing , that he suffered in silence because he knows that he won’t have to eat this meal again till next year some time. My mother’s verdict it was okay, it was tasty it was just the peas that put her off it reminded her too much of baby food. Huh since when is she not a lover of the simple humbly green pea? Parents I tell you, worse than kids, one minutes they love it and the next minute they can’t stand it.

Ingredients for the burger:

  • 2 x tins butter beans, drained and rinsed.
  • 2 x cloves garlic, chopped.
  • 1 x cup frozen peas, thawed.
  • 250g x ready to eat barley.
  • Salt and pepper to season.
  • 2 x tbsp. oil.

Method for the burgers:

  • Place everything in a food processor, except the oil and till nice and smooth.
  • Shape into burgers and pop into the fridge to chill for 30 minutes.
  • Add the oil to a pan and heat.
  • Fry the patties on both sides till nice and golden brown.
  • Pop into the oven to grill at 180 degrees for 10 minutes.

Ingredients for the avocado mash:

  • 2 x avocados, peeled.
  • Juice of ½ lemon
  • Handful of fresh parsley, roughly chopped.
  • Salt and pepper to season.

Method for the mash:

  • Place everything in a bowl and using a fork, roughly mash.

To assemble this burger:

  • Place the patty between two burger buns and top with the avocado mash and a few thinly sliced cucumber slices.
  • Serve with a side of baked beans curry and fried chips
