There are mornings during the week , when I really really hate making breakfast. Actually to tell you the truth, most mornings I hate making breakfast.
Simply because I am always late and my father always seem to be rushing me to get up and make something for him to eat and then when I take too long he hovers all around the stove and I land up burning or breaking whatever I am making.
I was busy planning the weeks food menu, when I came across this recipe in Naiya’s cookbook, it seemed super easy to make and the only problem I would have to face with this recipe is not making the bottom of the egg to crispy.
When I make the bottom of the eggs to crispy is scratches my dad’s throat and he will cough every time I am close by to show me that he is not making it up. Or if it is too crispy, he will eat around the crispy part… soo many fussy eaters in the household.
I ate this for breakfast as well and I loved it, the tastes and aromas ooohhh soo yummy and this dish was perfect all it required was one pan and a toaster, no million pots and pans to wash up afterwards.
- 1 ½ x tsp butter.
- 1 x slice of toast.
- 2 x eggs.
- Pinch of salt.
- Pinch of chilli flakes.
- Pinch of cumin seeds.
- Melt butter in a pan.
- Crack egg into the pan and fry.
- Baste the egg with the melted butter from the pan.
- Sprinkle over the salt, chilli flakes and cumin seeds.
- Place on toast and enjoy
