Who doesn’t love a nice and fluffy flapjack??? I do.
Sometimes the flapjack tastes more like baking powder than anything else… but this simple, easy and quick recipe is tops.
The flapjacks are light and fluffy and they just melt in your mouth.
I opted to use a ¼ x cup measure to pour the batter into the pan… my food critics at home refuse to eat big flapjacks… actually they get full from looking at anything big… let it be muffins, biscuits and I guess I can add flapjacks to the list as well. Whoever said small was the way to go, obviously never ate good food.
Ingredients:
7 x cups cake flour.
2 x tbsp. castor sugar.
1 x tsp baking powder.
½ x tsp salt.
1 x cup plain yoghurt.
2 x egg.s
1 x tsp vanilla essence.
Method:
In a bowl, mix all the dry ingredient.
Whisk in the eggs till well combined.
Whisk in the plain yoghurt, until there are no lumps.
Ladle some batter in a medium hot pan and allow to brown on side then flip and allow to brown on the other side.
Drizzle maple syrup over and enjoy
